During a successful 15-year career as an LMT practitioner, nutrition coach and fitness trainer, Christian was diagnosed with an intolerance to gluten and dairy, among other foods. Having devoted his life to health and fitness, these new dietary restrictions came as a life changing surprise.
From his passion about good food and the desire to learn more, he decided the best way to acquire new skills was to immerse himself into a formal culinary program. Christian attended the International Culinary School at the Art Institute of Houston in 2010, graduating with an A.A.S. in Culinary Arts. He then attended
Le Cordon Bleu in Madrid, Spain, and acquired a first level baking and pasrty certification.
During his time at Le Cordon Bleu, he started making initial plans to create
a gluten free baking business in Houston. Handcrafted, healthy and delicious
gluten-free breads and baked goods were no where to be found in a brick-and-mortar concept.
Upon returning to Houston, he had planned to complete a nutrition degree in it's
third year but decided it was best to continue with the current track to aqcuire
"hands on" training in gluten free baking. He secured a position at a start-up
gluten free bakery in Napa, California where he worked for 5 months through the 2015 holiday season.
After training, learning and time well spent, he returned to Houston and began working on the creation of gluten-free recipes that would be prepared with whole grains, natural ingredients, no preservatives or anything artificial, and that would remain true to his life's commitment and work.
Leven Baking Company was born - a start-up gluten free baking company whose focus lies in curating his line of mindfully crafted breads and baked goods.
Leven Baking Company is a start-up gluten free baking company in operation under the Texas Cottage Food Law. Started by owner and baker Christian Alvarado, we are guided by four key principles: "health, nutrition, hands and heart."
