During a successful 15 year career as a licensed massage therapist,
fitness trainer, and nutritional coach, Christian was diagnosed with a gluten and dairy intolerace. During this time, he was pursuing a nutrition degree at the University of Houston to incorporate nutritional expertise into his wellness practice. Having devoted his life to health and fitness, these new dietary restrictions came as a life changing surprise. Not having much prior experience with cooking or baking, he decided the best way to learn was to immerse himself into a culinary program.
In Houston, he attended the International Culinary School at the Art Institute to pursue a two-year culinary degree, and attended
Le Cordon Bleu, Madrid for a first level certification in baking and pastry.
After returning to Houston, he had planned to complete a nutrition
degree but decided it was best to continue the forward movement
with his new career path. He secured himself a position at a start-up gluten free bakery in Napa, California where he worked tirelessly
for 5 months through the 2015 holiday season. It was one of the best experiences in his life.
Upon returning from Napa, he began to work on the development of gluten and lactose free recipes that focused on using health conscious ingredients that could be enjoyed by a wide range of dietary restricted consumers.
Almost one year later, in November of 2016, Leven Baking Company was born - a start-up gluten free baking company, where he handcrafts his line of mindfull and delicious gluten free breads and pastires.
Leven Baking Company is a start-up gluten free baking company which operates under the Texas Cottage Food Law.
Started by owner and baker Christian Alvarado, LBC is guided by four key principles: "health, nutrition, hands and heart."
With these principles in mind, we bring together everything necessary for delivering our line of mindfully delicious gluten free breads and baked goods.
